Mnogi od nas odrasli su na riži na mlijeku, a sve je više onih koji joj se vraćaju - dijelom zbog nostalgije, dijelom zbog toga što im je, kako vrijeme odmiče, draže jesti laganu i mekanu hranu. No i novim generacijama ovaj je klasik sve zanimljiviji, prvenstveno kao alternativa kupovnim kašicama za bebe, a zatim i kao zgodan, jednostavan desert koji i dijete može napraviti.
No da biste u riži na mlijeku uživali u potpunosti, na neke ćete stvari morati pripaziti, jer koliko god ovo jelo može biti dobro, toliko može biti i loše. Donosimo nekoliko savjeta koji će vam pomoći da izbjegnete razočaranje i postignete bolji uspjeh.

A odgovor je riža sorte arborio, ako želite da vam je ovo jelo nježnije teksture, gotovo kremasto, odnosno basmati riža, ako volite da se osjete pojedina zrna. Za ovo se jelo ponekad koriste određene sorte kratkog zrna, ali s takvima ste u opasnosti da se previše raskuhaju.
Evo riječ-dvije i o mlijeku. Za ovo jelo najbolja je opcija punomasno (3,5% m. m.). Možete koristiti i ono s 2% mliječne masti, ali rezultat neće biti jednako kremast. Nem ojte ni pomišljati na mlijeko s manje od 2% mliječne masti. Koristite li zamjensko, biljno mlijeko, odlučite se za masnije kokosovo.
Tajni dodatak koji će ovo jednostavno jelo učiniti pravom poslasticom je slatko vrhnje: taj će mu dodatak podariti jedinstvenu, kremastu teksturu kakvu je teško postići na drugi način.

Kremasta riža na mlijeku
Sastojci
400 ml punomasnog mlijeka
60 g riže
35 g šećera
150 ml slatkog vrhnja
ekstrakt vanilije
prstohvat soli
Priprema:
Mlijeko zagrijte do vrenja pa mu uz miješanje dodajte rižu, šećer i prstohvat soli pa nastavite miješati dok smjesa ne zavrije. Smanjite vatru na malo jaču od niske te kuhajte smjesu riže i mlijeka oko 35-40 minuta uz često miješanje, kako se riža ne bi uhvatila za dno. Po potrebi dolijte još mlijeka.
U međuvremenu (žlicom) izmiješajte vrhnje, šećer i vaniliju.
Kad je riža mekana, dakle bez tvrdog središta, maknite lonac s vatre, umiješajte smjesu s vrhnjem pa vratite na laganu vatru još minutu, da se sastojci povežu.

Mnogi od nas odrasli su na riži na mlijeku, a sve je više onih koji joj se vraćaju - dijelom zbog nostalgije, dijelom zbog toga što im je, kako vrijeme odmiče, draže jesti laganu i mekanu hranu. No i novim generacijama ovaj je klasik sve zanimljiviji, prvenstveno kao alternativa kupovnim kašicama za bebe, a zatim i kao zgodan, jednostavan desert koji i dijete može napraviti.
No da biste u riži na mlijeku uživali u potpunosti, na neke ćete stvari morati pripaziti, jer koliko god ovo jelo može biti dobro, toliko može biti i loše. Donosimo nekoliko savjeta koji će vam pomoći da izbjegnete razočaranje i postignete bolji uspjeh.

A odgovor je riža sorte arborio, ako želite da vam je ovo jelo nježnije teksture, gotovo kremasto, odnosno basmati riža, ako volite da se osjete pojedina zrna. Za ovo se jelo ponekad koriste određene sorte kratkog zrna, ali s takvima ste u opasnosti da se previše raskuhaju.
Evo riječ-dvije i o mlijeku. Za ovo jelo najbolja je opcija punomasno (3,5% m. m.). Možete koristiti i ono s 2% mliječne masti, ali rezultat neće biti jednako kremast. Nem ojte ni pomišljati na mlijeko s manje od 2% mliječne masti. Koristite li zamjensko, biljno mlijeko, odlučite se za masnije kokosovo.
Tajni dodatak koji će ovo jednostavno jelo učiniti pravom poslasticom je slatko vrhnje: taj će mu dodatak podariti jedinstvenu, kremastu teksturu kakvu je teško postići na drugi način.

Kremasta riža na mlijeku
Sastojci
400 ml punomasnog mlijeka
60 g riže
35 g šećera
150 ml slatkog vrhnja
ekstrakt vanilije
prstohvat soli
Priprema:
Mlijeko zagrijte do vrenja pa mu uz miješanje dodajte rižu, šećer i prstohvat soli pa nastavite miješati dok smjesa ne zavrije. Smanjite vatru na malo jaču od niske te kuhajte smjesu riže i mlijeka oko 35-40 minuta uz često miješanje, kako se riža ne bi uhvatila za dno. Po potrebi dolijte još mlijeka.
U međuvremenu (žlicom) izmiješajte vrhnje, šećer i vaniliju.
Kad je riža mekana, dakle bez tvrdog središta, maknite lonac s vatre, umiješajte smjesu s vrhnjem pa vratite na laganu vatru još minutu, da se sastojci povežu.
