Baš se nešto danima nećkamo hoćemo li vam uopće ponuditi recepte za bakalar. Ne da ga mi ne volimo, bože sačuvaj, nego se u bakalar najbolje ne dirat puno. Tko ga voli, zna ga pripremiti i već ima svoj najdraži recept od kojeg mu nije drago odstupati.
Razlozi su razumljivi: malo tko si želi uskratiti priliku za guštanje u omiljenom okusu kad takva najčešće dolazi dva puta godišnje, a s druge strane, malo tko se želi gnjaviti s pripremom skupog i pomalo pepavog jela pa riskirati da mu netko od ukućana zabrontula zbog rezultata. Stoga se u pravilu igra na sigurno.
Ali eto, recimo da netko od naših čitatelja, baš poput nas, vjeruje da uvijek ima mjesta za usavršavanje. Takvima nudimo dobar, jednostavan recept za bakalar na crveno pa neka im se nađe.
Bakalar na crveno
Sastojci:
500 g bakalara
500 g krumpira
200 ml maslinovog ulja
1 žlica koncentrata od rajčica
1 veći luk
1 list lovora (po želji)
češnjaka (količina po ukusu)
sjeckani peršin
sol, papar
Priprema:
Namočeni bakalar (moči se dva do tri dana uz mijenjanje vode) stavite u hladnu vodu. Kad zakuha, kuhajte koju minutu pa ugasite vatru i ostavite bakalar neko vrijeme u toploj vodi. Kad se malo ohladi očistite ga i natrgajte na krupnije komade.
Zagrijte ulje, dodajte nasjeckani luk pa ga dinstajte dok ne omekša, dodajte nasjeckani češnjak, dinstajte još malo dok ne zamiriše pa zalijte vodom u kojoj se kuhao bakalar.
Dodajte bakalar, krumpir narezan na ploške, ubacite koncentrat rajčice, posolite i dodajte lovor ako ga koristite.
Pustite da se kuha na laganoj vatri dok ne omekša, po potrebi dolijevajte vodu u kojoj se bakalar kuhao, a negdje na pola kuhanja dodajte nasjeckani peršin.

Baš se nešto danima nećkamo hoćemo li vam uopće ponuditi recepte za bakalar. Ne da ga mi ne volimo, bože sačuvaj, nego se u bakalar najbolje ne dirat puno. Tko ga voli, zna ga pripremiti i već ima svoj najdraži recept od kojeg mu nije drago odstupati.
Razlozi su razumljivi: malo tko si želi uskratiti priliku za guštanje u omiljenom okusu kad takva najčešće dolazi dva puta godišnje, a s druge strane, malo tko se želi gnjaviti s pripremom skupog i pomalo pepavog jela pa riskirati da mu netko od ukućana zabrontula zbog rezultata. Stoga se u pravilu igra na sigurno.
Ali eto, recimo da netko od naših čitatelja, baš poput nas, vjeruje da uvijek ima mjesta za usavršavanje. Takvima nudimo dobar, jednostavan recept za bakalar na crveno pa neka im se nađe.

Namočeni bakalar (moči se dva do tri dana uz mijenjanje vode) stavite u hladnu vodu. Kad zakuha, kuhajte koju minutu pa ugasite vatru i ostavite bakalar neko vrijeme u toploj vodi. Kad se malo ohladi očistite ga i natrgajte na krupnije komade.
Zagrijte ulje, dodajte nasjeckani luk pa ga dinstajte dok ne omekša, dodajte nasjeckani češnjak, dinstajte još malo dok ne zamiriše pa zalijte vodom u kojoj se kuhao bakalar.
Dodajte bakalar, krumpir narezan na ploške, ubacite koncentrat rajčice, posolite i dodajte lovor ako ga koristite.
Pustite da se kuha na laganoj vatri dok ne omekša, po potrebi dolijevajte vodu u kojoj se bakalar kuhao, a negdje na pola kuhanja dodajte nasjeckani peršin.
